The blade of all Kuhn Rikon COLORI knives is crafted from carefully-selected Japanese stainless steel that is heated in an annealing furnace at over 1000 degrees Celsius/1832 degrees Fahrenheit. This creates a cutting surface that is not only robust, but also flexible and rust-resistant. The blade is then polished and ground by hand on both sides. Every knife receives a final grinding by an experienced and skilled craftsman. The angle of the grind (14 degrees on each side; double-bevelled) is crucial in achieving the ultra-sharp finish.
