HOW TO BREW

1. Unwrap one pressed tea leaf.

2. Place it in a cup or teapot and pour hot water over it (near-boiling for black and pu-erh; slightly cooler for white tea).

3. Steep 3–5 minutes, to taste – and watch the leaf slowly open.

4. Re-steep the same leaf 2–3 times.
