Boil Adzuki beans in a large pot of water for 45 minutes, or until tender. Adzuki beans can be used in soups, stews, casseroles, salads, or as a meat substitute for vegetarian or vegan meals. For best cooking results: 1. Rinse & drain 2. Soak in unsalted water overnight 3. Drain, add to pot with fresh cold unsalted water, slowly bring to a boil until the beans are tender, 2 to 3 hours approximately.
