FEED YOUR FAMILY COMFORT FOODS THEY’LL LOVE & YOU CAN FEEL GOOD ABOUT!
Up for auction today is a Special Collector’s Edition Taste Of Home cookbook/magazine entitled “Light Comfort Food.” It’s soft-cover and copyrighted 2016.
Here’s the introduction, by Catherine Cassidy, Editor-In-Chief, found inside the cookbook/magazine:
After a season of indulging at holiday get-togethers, I always look forward to a fresh start in the new year. It feels so good to make smart eating a habit again, but we could all use a little help. That’s why we’re here! We gathered our favorite lightened-up comfort food recipes in this all-new collection so you can eat foods you love and still shed those pesky pounds.
Eating well doesn’t mean you have to stop doing the things you love. Lisa Varner’s Saucy Asian Meatballs, page 8, are made with lean turkey instead of ground beef, making them a smart choice for game-day parties. Just bake them up and keep them in the slow cooker so they stay warm through the fourth quarter—if they last that long!
I love Mexican food, but not all the fat and calories that go with it. So I invented Meatless Mexican Mondays, and Kristin Rimkus’ Black Bean and Corn Tacos, page 34, are in the regular rotation. The crunchy veggies and filling beans take care of my taco fix. And since they’re table-ready in half an hour, there’s more time to enjoy the family fiesta.
My cookie jar is stocked too! Ashley Wisniewski’s Snickerdoodles, page 132, capture all the sweetness of the classic version with only 52 calories and a mere 1 gram of fat. They are all you could want in a cookie: crunchy on the outside, soft on the inside, with just the right amount of cinnamon spice. My girls didn’t even notice they were light! Here’s to living well!
Here’s a list of the recipes found inside the cookbook (I’ve also included the name and location of the individuals, who submitted each recipe to the Taste Of Home cookbook, after each recipe below):
