This is a traditional Tetsuken Yoshimasa kama-shaped thin-blade knife, ideal for various kitchen tasks. The blade length is approximately 19.5 cm, featuring a single-bevel edge. The steel type is unknown, but the knife bears a genuine forging and guarantee mark, which has faded slightly over time. The blade is crafted in the Kansai style, known for its slender profile, making it versatile for decorative slicing, peeling, garnishing, chopping, and sashimi preparation—an essential tool for any kitchen.
The handle was replaced due to a crack, and although the knife shows signs of rust and scratches, it has been restored and polished to a mirror finish. Some minor remaining rust pits and scratches are present but do not affect performance. The blade and flat surfaces are nearly mirror-polished, ensuring a sharp, smooth cutting edge. The knife is lightweight with excellent balance, suitable for both professional chefs and home cooks.
The sharpening was done with a Kitayama 8000 grit stone and a Shapton 12000 grit stone, resulting in a highly sharp edge ready for immediate use. The knife measures approximately 355 mm in total length, with a blade thickness of about 4.0 mm at the spine, and weighs around 200 grams.
