HOW THE HIGH-LIMIT THERMOSTAT WORKS

A high-limit thermostat is a safety overtemp switch separate from your main operating thermostat. The capillary tube and sensing bulb sit in the cooking chamber or oil tank, and a fluid-filled diaphragm reacts to temperature. When the chamber hits the 450°F trip point — even momentarily — the SPST contacts snap open and cut power to the heat element circuit.

This is the part inspectors check during annual commercial kitchen inspections. A failed-closed limit means no overtemp protection (fire risk). A failed-open limit means the equipment won't run at all. Either way, you have to replace the limit to get back in service.
