  • Blade Design: This is a traditional Japanese Yanagiba knife for slicing sashimi. The long 300mm blade allows you to cut through raw fish in a single, smooth pull. This method preserves the texture and flavor of the fish perfectly.
  • Steel Characteristics: Forged from White Steel No.2 (Shirogami). It provides a very sharp edge and is easy to sharpen when needed. The hardness is HRC 60-61. Please note it is carbon steel and will rust, so you must dry it completely after use.
  • Handle & Structure: Features a traditional Ho wood (Magnolia) handle with a natural buffalo horn ferrule. It is lightweight and balanced, providing a comfortable grip for delicate and precise slicing work.
