Aji Delight is a Capsicum baccatum chilli, a species native to South America, especially Peru and Bolivia. Like many aji types, it traces its roots to Andean regions where baccatum chillies have been grown for centuries for their fruity flavour rather than extreme heat.

Aji Delight is a modern, selectively bred variety, developed to capture the classic aji aroma while keeping heat very low. It became popular in Europe with gardeners and cooks who wanted the flavour of aji chillies without the burn, making it a relatively recent but well-loved introduction.

The plant produces slender, teardrop-shaped pods, typically 6–8 cm long. Fruits ripen from pale green to creamy yellow and finally to bright red, giving a very decorative look. The plants themselves are upright and leafy, typical of baccatum types.

Aji Delight plants are vigorous and productive, usually reaching 60–90 cm tall. They branch freely and set large numbers of fruits over a long season. Like most baccatums, they prefer warmth and light and are slightly slower to mature than annuum chillies, but they reward patience with heavy cropping.

The flavour is sweet, fruity, and aromatic, with notes often compared to citrus and tropical fruit, and only very mild heat (around 500–1,000 SHU). This makes Aji Delight ideal for fresh salsas, salads, stir-fries, stuffing, pickling, or simply slicing raw — perfect when you want chilli flavour without overwhelming spice.
