Basic Damascus Series a fusion of sharpness and ease of maintenance.
Skilled craftsmen put their hearts into sharpening each blade. When this blade is skillfully applied in the opposite direction of hair growth the hair splits showcasing its sharpness. With the weight of this knife you can effortlessly cut tomatoes cleanly without applying much pressure. Moreover you can halve a tomato place it on a cutting board and slice it thinly horizontally without pressing down with your hand. Once you get used to this sharpness you won't be able to tolerate cooking with a dull knife anymore. A dull knife wastes time effort and energy resulting in sloppy cuts and compromised flavors. If you use a good tool daily you can utilize your time efficiently.
The core material of the blade is V Gold 10 (VG10) steel. This material is higher quality than those commonly described as molybdenum steel molybdenum vanadium steel special steel hard stainless steel or special stainless steel. Its sharpness and edge retention are superior which is a significant difference between high-end and low-end knives.
This material contains cobalt in addition to molybdenum and vanadium making it a premium stainless steel blade steel with optimal conditions for wear resistance toughness and hardness. Professionals also use it. As it is stainless steel you don't need to worry about rust like with non-stainless steel knives. Medical blades with added molybdenum and vanadium are known for their sharpness but with the additional cobalt they become even harder sharper and have longer-lasting sharpness. This means fewer sharpenings making maintenance easy. If the cutting performance deteriorates quickly when cutting a large amount of ingredients at work it hinders productivity.
The Damascus pattern is achieved by layering different metals together creating this intricate pattern. This layering and forging technique known for Japanese swordmaking produces extremely high-quality blades. Through the process of layering and forging multiple materials the structure becomes more dense and uniform compared to single-layer materials resulting in increased hardness and eliminating blade warping. The V Gold 10 core material after being forged becomes even sharper more resistant to chipping and has improved edge retention.
The side material is made of softer stainless steel than the hard core material creating very easy sharpening. Additionally V Gold 10 is easier to sharpen compared to lower-grade molybdenum vanadium steel.
The gently curved shape called the "clamshell edge" easily bites into the ingredients providing an ideal shape for both sharpness and strength. This is one of the differences between cheaper knives. It also improves ingredient separation. A slight force can smoothly cut into the ingredients an essential element of sharp cutting performance. Without the clamshell edge the knife may initially be sharp but lose its sharpness rapidly after resharpening.
The thin blade thickness of 1.8mm contributes to its vivid sharpness. Even a slight difference in thickness can alter the cutting sensation. One reason why foreign-made knives may not be sharp is due to their thickness. However if the blade is too thin it is more prone to chipping and loses sharpness quickly requiring frequent sharpening. Therefore a balance is maintained for professional use.
Proper heat treatment is a crucial step in infusing life into the knife. It affects the ease of sharpening and sharpness. The furnace temperature and duration vary with the season requiring meticulous knowledge and precision. It is truly the craftsmanship of Fujiwara's from Tsubame Sanjo known for their knives. Without proper heat treatment the knife may literally not "hold an edge " meaning it cannot maintain a sharp edge or it may quickly lose its sharpness akin to inexpensive stainless steel. Appearance can be deceiving. For example to produce a V Gold 10 knife at a lower cost it may be heat-treated overseas have a handle added there and only be sharpened in Japan. However the heat treatment may not be done correctly which has been criticized in the Japanese knife industry.
This knife not only has a splendid appearance and sharpness but also makes maintenance easy guaranteeing an enjoyable cooking experience. It is recommended for those who appreciate quality tools and love cooking.
