The saj can be used on 2 sides One as a Pita /Roti / Chapati Naan Maker (on the domed side)

On the convex side it can be used as a wok, for roasting grains, stir frying, and other Chinese cooking techniques.

 

Saj,Podpłomyk (Arabic: صاج) Lebanese name or Markook  is a type of flatbread common in the countries of the Levant. It is baked on a domed or convex metal griddle, known as "saj". It is usually large, about 2 feet in diameter, and thin, almost translucent. Similar to the procedures for making some other flatbreads, the dough of markook is flattened and kept very thin before cooking, resulting in a very slender depth. It is usually folded and put in bags before being sold. It is commonly compared to pita bread, which is known in Mediterranean cuisine.

 

This SAJ is a large convex disc - shaped griddle made from heavy metal, sheet iron. It can resist very high temperatures during the use.

The SAJ was made by hand in "HEBRON" city near "JERSALEM" with the same methods that were used hundreds years ago.

 

It is used in south, central, and west Asia for cooking a variety of  flat breads, Pita and as a griddle for meat.

In west Asia SAJ are invariably convex, while in south Asia both flat and convex versions are found.

 

Druzs and Arabic people name it SAJ while the Persian names it tava, tawa or Markook.

 

Similar to the procedures for making some other flat bread, the dough is flattened and kept very thin before cooking, resulting in a very slender depth. It is usually folded and put in bags before being sold. It is commonly compared to pita bread, which is known in Mediterranean cuisine.

 

Baking time is approximately 2–3 minutes. During baking, the bread is turned over once to brown the other side.

After baking the bread it has low moisture content. Depending on how low the moisture is a long shelf life.

Before consumption the bread is sprayed with warm water. The moistened bread is covered with a cotton cloth and is rested for 10 to 12 minutes before serving.

 

 

 

Recipe for 15 pitas (flat pitas):

1 tablespoon salt
1 kg white flour
3 - 2 ½ cups water
3 tablespoons olive oil




 

You need to Mix the flour and salt in large bowl.

Gradually add the water and oil, and knead until dough is supple and not sticky.

Create 15 small dough balls the size of a tennis ball. Place the balls in a bowl and cover with damp cloth.

Stretch each ball with a rolling pin or Round Pillow. The thinner the Bread is the shorter time of baking.

Place the dough on a SAJ about -20-30 seconds, until the formation of air bubbles. Turn over and bake for about -20-30 seconds.

Apply the favorite spread on the bread roll and eat.
