Nanbu Tekki is a traditional craft from Iwate with a history of 900 years. It has a simple and warm texture that gains more character with use. Boiling water in Nanbu ironware brings out divalent iron which is easily absorbed by the body making it effective for replenishing iron. Before the first use and after each use rinse the interior lightly fill it to 80% with water and boil for about 15 minutes. (Initially the water may become cloudy due to traces of metal; repeat boiling until the water is clear before using.) If the ironware has not been used for a long time perform the same procedure before resuming use.

After use transfer any remaining water to a pot leave the ironware empty dry it thoroughly and store. If rust starts to form and the water becomes cloudy rinse lightly fill to 80% with water add about a teaspoon of tea leaves wrapped in cloth and simmer for 15-20 minutes avoiding dry heating. This method utilizes a chemical reaction between tannin and iron to prevent rust. Repeat this process 2-3 times for better results. Then rinse lightly boil water once or twice and proceed to use.
