Bourbon Yellow Coffee (Coffea sp.) is a natural mutation of the original Bourbon variety, first discovered in Brazil. Unlike its red counterpart, Bourbon Yellow develops cherries with a striking yellow hue at maturity, making it visually distinctive during harvest. This variety is renowned for its sweet, well balanced cup profile with mild acidity and a creamy mouthfeel, often featuring notes of honey, vanilla, and stone fruit. It is favored in specialty coffee production for its aromatic complexity and smooth finish. The plants have a compact growth habit and exhibit moderate productivity under favorable conditions. Though somewhat susceptible to coffee leaf rust and pests, it remains popular due to its flavor characteristics and suitability for high quality processing methods such as pulped natural and washed. Bourbon Yellow performs best in well drained soils and requires attentive harvesting to ensure optimal ripeness.
