Description

This is a traditional tane-koji (koji starter) from “Hishiroku,” a long-established producer with over 300 years of experience specializing in koji starters.

It is ideal for making koji and especially suitable for home preparation of rice koji.

The Chōhakukin strain is characterized by its long hyphae and low browning tendency, meaning it maintains a white appearance with minimal discoloration.

This makes it particularly well-suited for producing white-colored fermented foods such as salted rice malt, rice koji, amazake (sweet sake), and white miso.

This koji starter (tane-koji) is ideal for those who wish to make koji at home.

With 20g of tane-koji, you can produce koji from approximately 15kg of rice (measured as uncooked, pre-soaked rice)
