Description
Surströmming is the Swedish name for soured fermented herrings.
Caught in the cool Baltic waters of southern Sweden during the spring months,
the herrings are fermented in barrels of brine for a month or two before being
canned. In the absence of pasteurisation or sterilisation the fermentation
process continues in the cans which, after approximately six months, pressurize
and bulge. This is perfectly normal and, as long as there are no leaks, they
are safe to eat from.

The fish is often
eaten as is or with tunnbröd, a thin, either soft or crispy bread,
a tradition is to
make a sandwich "surströmmingsklämma" using two pieces of buttered
tunnbröd.
In addition to the
fish, two of the most common toppings are potatoes and diced onion.
In Sweden, it is
customary to use a variety of condiments such as shopped Onion &
Chives,
Crème Fraîche,and
sometimes diced tomato's.
Surströmming is most commonly
served with a few Beers and a shot (or three) of Absolut Vodka
