I much prefer the texture and it fries up super crunchy.
Purple sweet potato flour is a thing too :)
There are lots of health benefits in purple foods and full of anti oxidants.
Sweet potato are a great and easy food / staple. they can be grown in the ground, they do really well in containers, and are then easy harvest.
Besides these fab tubers, so high in so much good stuff, there are the leaves which grow in abundance and can be used similar to spinach, and which produce for a very long time. Here in qld year round almost.
The more you snip, the more new shoots it will grow.
Hang from a pot, and keep snipping those wonderful fresh runners it will send out, giving easy access to healthy home grown greens. These will even do it inside, just keep them near a sunny window.

molokai is longer and more slender, the Molokai tuber in pic is over 30cm long
