It is one of the basic spices in the cuisine of Middle Eastern countries. In Iran, for example, you will see sumac on the table, next to salt and pepper.

Its main use is in kebabs (mainly from lamb, but also from pork and chicken leg), usually together with some hot spice (e.g. bukovo, hot paprika, cayenne, chili) or cumin.

We can use it instead of lemon, to give acidity and also a little color to grilled fatty meats, lamb ribs, pork chops, pancetta and chicken legs. It is also used in falafel and other legume meatballs, as well as in hummus instead of lemon.

It gives excellent flavor to a whole chicken in the oven along with garlic and oregano.
We use it to give acidic tones to marinades, sauces and salads.

It goes well with raw onion, for example we salt thin slices of onion, mix them with our hands and sprinkle with sumac, mix them with  garnish them in tomato salads and kebabs.
