This 80 qt spiral dough arm was designed for the Hobart Classic 80 qt mixers. This dough hook is best used for mixing, stretching and folding pizza or bread dough. For 2 and 3 speed mixers, Hobart recommends 1st or 2nd speed. For 4 speed mixers, use 1st, 2nd or 3rd speed.
