This little book was published around 1910-1920 as a practical guide for the settler and self-sufficient. In those times it was still customary to slaughter the meat for the family's own needs. The further processing of the animal was also carried out by the farmer and the family themselves. What happens behind closed doors in slaughterhouses today (so that no consumer notices) was commonplace back then. If you want to eat meat, you should also be ready to kill and process the animal yourself. Unfortunately, most people move further and further away from reality, which often seems too cruel to them. It is true that sterile packed and prepared pieces of meat are bought in the supermarket every day - but very few buyers want to know how these pieces of meat got there.
These instructions show long-repressed and forgotten knowledge, which was still practical general knowledge in the country 80-100 years ago.
