Chef knife manufactured for use at or by or for The Culinary Institute of America. Markings indicate "Professional Culinary Skills Workshop." This is a cut above the typical older Chicago Cutlery knives, curved solid wood handles attached to full tang with three brass rivets, stainless steel blade. It has been lightly used, there are some scratches on the blade, just re-sharpened properly, sharp and ready to use. Markings on reverse somewhat hard to see: I was polishing it with 1000 grit sandpaper to see if I could remove the scratches and started removing the etch by accident, so I stopped - but you can see that the etch has been partially erased, although it is still readable. High grade knife. See pictures. Etched on front with "AC124  U.S.A." over "Chicago  (logo) / Cutlery." Reverse etched "The Culinary Institute of America / ARA / Services / ARASERVE" then "Professional Culinary Skills Workshop."
