The Tosa Uguisu Nakiri is a traditional Japanese vegetable knife forged from iron and steel in Tosa, Kochi Prefecture. The nakiri's straight-edged, rectangular blade is purpose-built for clean push-cuts through vegetables, making it the preferred tool for Japanese home cooks who prepare large volumes of produce.

The flat blade makes full contact with the cutting board, so every slice goes cleanly through without the rocking motion required by Western-style knives. At 5oz (141g) with a magnolia wood handle, it has enough heft for dense root vegetables while remaining comfortable during extended prep sessions. The forged iron and steel blade takes and holds a remarkably sharp edge when maintained on a whetstone.
