Why Dehydrated?

Dehydration is a controlled preservation process where the water content of any product is brought down, whilst all its innate characteristics like, colour, taste, aroma , essential oils etc are retained. This reduction in water content helps lower the activity of water inside the product that stops its aging and spoilage thereby extending its shelf life.

Dehydration sounds very similar to drying but it is a completely different process. Drying process is an uncontrolled, long and unhygienic process and results in loss of the products innate characteristics. Dehydration on the other hand is controlled, clean and scientific process to remove just the water content of the product and gives you MORE FLAVOUR PER GRAM.

The Product

A vegetable of numerous health benefits and even more native names (Also called Karela in India), our Dehydrated Bittergourd FLAKES are manufactured by Washing, slicing & dehydrating in Hot Air Machines. Hot Air Machine Dehydration not only gives a contamination and impurity free product but it also retains the Original Colour, Taste, Aroma & Essential Oils of the product.

Procurement of Fresh Produce from Farms

Raw Material is procured from contracted farms that follow strict quality parameters in their agricultural practices. These products are brought straight from the farms to our processing facility with minimal farm time to keep up the quality of the product. A thorough removal of all soil residue on the product surface is carried out by us before using it for processing. These practices assures us of delivering high quality product which starts right from the quality of the fresh harvest.

Washing and Removal of Unwanted Parts

The cleaned products are then processed to pre-process in order to remove the unwanted roots, peels, seeds and stems. After through pre-processing, the products are washed to clean any remains of soil, dust or any wanted parts to finally give out a cleaned product making it ready for consumption. Throughout this step the product does not come in direct contact with any person to attain the hygienic standards.

Sorting & Cutting to Adequate Size for Consumption

The washed products are sorted to check for any non-conformity in prescribed standard quality after which they are sent for cutting or slicing into smaller pieces. This reduction in size makes the product ready for use/consumption by the user. Throughout this step the product does not come in direct contact with any person to attain the hygienic standards.

Processing in Hot Air Machines to attain clean Dehydrated Product

The sliced/cut products are then processed inside specialised Hot Air Machines which process the product to bring down their moisture level to an extent that the age of the product is ‘Paused’, thereby pausing enzymatic actions and thus avoiding spoilage. The dehydrated products have no loss in colour, flavour, aroma or any nutritional properties, when compared to its fresh form.

Strong Aroma, no microbial or fungal organisms & rich colour are characteristic of the SHROOTS product line which can be easily rehydrated to ‘Resume’ their fresh form life at any point in time.
