1 quartered chicken,1 yellow onion,8 carrots,2 ounces dried plums,½ ounce fresh chives,6 tbsp Soy Vay Veri Veri Teriyaki Marinade & Sauce,1 tbsp dijon mustard,1 cup apricot preserves,¾ cup orange juice,½ cup Soy Vay Veri Veri Teriyaki Marinade & Sauce
Instructions:
Preheat oven to 400º F, grease a baking dish., Combine potatoes, carrots, and plums in the dish. Pour a mix of orange juice and ½ cup Soy Vay over., Bake covered for 20 mins, then uncovered for 25 mins., Caramelize onions in olive oil, add 6 tbsp Soy Vay, mustard, and apricot preserves., Sear and season chicken, place on a baking sheet, pour onion sauce over., Bake for 30 mins, basting every 15 mins., Serve family-style, garnish with chives.
