Our yerba mate has been beautifully aged to soften its flavour, as fresh green yerba mate can be very bitter and may have a fishy aftertaste. The longer the mate is aged, the less bitter it becomes. Aging the yerba mate usually takes between 9 and 24 months and this also changes its colour to a slightly more yellow hue. The process of aging it also ensures that it naturally develops additional nuanced and subtle flavours.
