The leaves are gently roasted until they darken and develop a rich, roasted flavor profile.
The single ingredient has a smooth autumnal character and roasty flavor. The aroma of the dry leaf is a little earthy.
Roasting the leaf gives it a sweeter tone, almost a caramel note, which balances the leaves' natural astringency.
Adding a little honey or raw sugar accentuates the naturally occurring sweetness of roasted yerba mate. It's also delicious as a latte - just add a splash of steamed milk.
