The Tojiro F-908 Yanagiba knife features a core blade made of Shirogami steel with the outer layer being soft iron. It is easy to re-sharpen and has good edge retention. This is a great starter knife for anyone that wants to try White Steel.
The handle is made with Magnolia wood and has excellent grip. Yanagiba, also known as Yanagi, is predominately used for sushi applications. Slicing fish for nigiri or sashimi, but chefs also use it to cut sushi rolls. Very versatile knife overall.
This knife requires care after handling. Blade MUST be kept dry during periods when not in use. Keep blade covered during storage.
