When sharpening a knife with a sharpening stone, this tool helps maintain the most suitable angle for kitchen knives. It has two slits: one for small knives and one for larger knives.

The small slit is designed for petty and paring knives.
The large slit is suitable for Santoku and chef’s knives.

Note:
Not suitable for single-bevel knives such as Yanagiba (sashimi knives) or Deba.
