Black Salt is
often referred to as ‘Kala Namak' or simply ‘Sanchal’ even
though it is actually deep pink in colour. It’s a beautiful unrefined table
salt that can help enhance the flavours of a dish. It is a special type of
mineral salt from India, mined from a volcanic rock salt mined in central
India.
Kala Namak is
used in Indian cuisine as a seasoning, most commonly used with snack foods. It
is used in chaats (fruit glazes), chutneys, raitas (yoghurt and cucumber
mixes), fruit salads, and savoury deep-fried snacks.
The ground salt
is not black, but more of a coral pink or pinkish grey, and has a distinctive
sulphurous mineral taste (like a hard-boiled egg). These colours come from
trace minerals, such as magnesium, as well as volcanic iron.
