The inside of the Jerky Board Pro is perfectly machined to 3/8 of an inch deep. The insert is 1/8 of an inch thick.  Using the insert will achieve a 1/4 inch depth.  If you need thinner pieces of jerky, extra inserts can be found on our store and will allow you to achieve 1/8 inch depth for ultra thin jerky.

Works best with a thin blade fillet style knife with 8" blade or longer.
