Compared to katsuobushi (dried bonito flakes), sodabushi is known for producing a rich, full-bodied broth with deep umami and a fragrant aroma.
Sodabushi from Kochi Prefecture has been finely powdered, bones included.
Use it in place of dashi granules/stock powder.
It is packed with calcium, so it is recommended for children.
The soup made by combining it with a rich, matured dashi soy sauce aged with “sodabushi that yields excellent dashi” is exquisite.
Simply mix it with miso and dissolve in hot water to make a superb miso soup.
