Japan's First, Phantom Spice: Indonesian Sansho Pepper

Sansho pepper carefully preserved only by the people around Lake Toba on Sumatra Island, Indonesia.

Based on a field survey conducted in October 2022, the import of Indonesian sansho has finally become feasible, and imports have been possible since March 2023.


The Indonesian Ministry of Industry has long been developing this product with the aim to popularize it widely throughout Indonesia, and with the cooperation of Dr. Nishigaki from M&K, we are delighted that this long-cherished dream has come true.

The product has been named “Andaliman Sansho.”

Wild sansho naturally grows only in a very limited area of Sumatra Island, Indonesia, and has been used for many years as a rare seasoning by the indigenous Batak people.

The Batak people are considered an accomplished ethnic group in Indonesia, known for producing many prominent figures in politics, business, and the judiciary.


Indonesian Andaliman sansho is characterized by a refreshing and sharp fragrance similar to Japanese sansho, combined with a softer, citrus-like aroma with a higher sweetness ratio.

It contains more limonene essential oil than Japanese sansho and various other fragrant compounds, making it a phantom sansho that surely stimulates the Japanese appetite.
It surpasses Japanese sansho and can be considered a new sansho suited to Japanese tastes.


It has a completely different aroma and taste from Chinese Sichuan pepper, which is a major distinguishing feature.

The main component of sansho’s aroma and flavor is limonene, and it has been confirmed that the limonene content in Andaliman sansho is significantly higher than any Japanese variety.
 

Please use it not only with eel but also in pickles and other dishes that highlight sansho’s flavor.
As it comes whole, in some dishes you may lightly crush it into powder for use.
