Hatcho Miso produced by Kakukyu Co., Ltd., a company devoted exclusively to miso-making since 1645 in Okazaki City, Aichi Prefecture.
This is Hatcho miso made using only domestically produced soybeans.
It is prepared in large wooden vats, with natural river stones carefully stacked by craftsmen into a cone shape to serve as weights,
and naturally aged through two summers and two winters (over two years) by traditional fermentation—this is a soybean miso.
It features rich umami, a slight sourness, and a deep, astringent-bodied flavor.
