Ingredients:

300g bread flour /6g salt /4g instant yeast /210ml lukewarm water /Cornmeal or flour (for dusting the pan)

Procedure:

Step 1: In a large bowl, mix bread flour, salt, and yeast. Add water gradually, stirring to form a soft dough. Knead on a floured surface for 8-10 minutes until smooth. Cover the dough and let it rise for 1 hour, or until doubled.

Step 2: Gently deflate the dough, divide it in half, and shape each half into a baguette. Place the loaves into a cornmeal-dusted two-slot baguette mold. Cover and let rise for 30 minutes, until slightly puffed.

Step 3: Preheat the oven to 220°C (425°F). Score each baguette with shallow cuts. Bake for 20-22 minutes, adding a tray of hot water to the oven bottom for steam. Bake until golden and crispy, then cool before slicing.

Tips:

* Dough should feel smooth and elastic after kneading.

* Keep dough covered to prevent drying out during rising.
