These are freshly dug organically grown Jerusalem Artichoke tubers. Ready to eat or plant. Many are starting to sprout! I put a few cut pieces of tubers in dirt in a pot and the results are in the last photos! They will sprout quickly in warm weather. I offer volume pricing and shipping so buy more and save! They are very hardy and can be planted anytime the soil is moist preparing for spring sprouting. Plant 4 to 6” deep and at least 12” apart in sunny location. Keep watered if conditions are dry. Plants will grow to 6 to 10 feet tall and after harvesting will come back every year. Tubers range from very large (6 oz) to very small (.5 oz). Keep tubers moist in refrigerator until ready to plant. Larger tubers can be split to plant as long as segments have a node or two to sprout. Harvest in the fall when green stalks die back or leave them in the ground all winter and harvest as needed till early spring.
They are a great vegetable to eat raw, having a sweet nutty flavor and nice in salads to add crunch! They also can be sautéed or added to soups. Your animals will love them too! The leaves are a favorite of my chickens and bunnies! My bunnies love the tubers!
The photo is representative of what you’ll get, but not exact because every tuber is unique. That’s why I sell by weight so you are assured a specific amount. If tubers are small they will grow just fine, if tubers are larger feel free to divide them and they’ll still grow great! The reason they are perennial is because even the small fragments of the tubers I can’t harvest are enough to grow next years crop! They are a wonderful ever producing vegetable so remember wherever you plant them, you’ll have more crops in that location for years to come😊
