Make Breakfast as Amazing as Spider-Man!

Easy Basic Vegetarian or VEGAN Pancakes:
There are literally thousands of recipe's online for traditional pancakes, however, for those who either choose or are unable to eat eggs due to health reasons, I have had found a need to locate a suitable alternative (my wife is highly allergic to eggs, so has missed out on a lot of the comfort foods we may normally take for granted. I present to you one VEGAN recipe that we enjoy - egg free (and tentatively nut and dairy free as well depending on your choice of using dairy or non-dairy milk) bellow that I'm sure your loved ones will enjoy
Ingredientsfor 4 servings- 1 cup flour(125 g)
- 2 tablespoons sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup non-dairy milk(240 mL) (I have used regular milk as well in the past, some prefer almond milk)
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla
- maple syrup, butter, berries, whip cream - or what ever topping you like - to serve
Directions
- Preheat the Spider-Man Pancake maker
- Spray the surface of the pancake maker with a small amount of non-stick spray
- In a medium bowl, add the flour, sugar, baking powder, and salt, and stir to combine
- In a medium bowl or liquid measuring cup, add milk (or milk alternative), apple cider vinegar, and vanilla, and stir to combine
- Pour the liquid mixture into the dry mixture and whisk until smooth.
- Let batter rest for 5 minutes
- Using the included scoop, pour batter into the pancake maker.
- Cook with the pancake maker open for about 3 minutes, or until the edges begin to dry and top is starting to bubble.
- Close the lid and flip the pancake maker. Continue to cook closed for approximately 30 seconds
- Open and continue cooking until golden brown
- Serve immediately with butter and syrup or hold briefly in warm oven
- Add your favourite toppings to make your breakfast fun!
