Il Sorgo (Sorghum Vulgare o Sorghum Bicolor) è una pianta annuale della famiglia delle Poaceae.
Cresce in media fino a 1-2 metri di altezza (ma alcune cultivar possono arrivare fino a 3-5 metri), produce delle spighe con infiorescenze seguite dallo sviluppo della granella (sementi).
Il sorgo è considerato il 5° cereale più importante al mondo dopo mais, frumento, riso e orzo, ed è uno dei più resistenti alla siccità.
La granella prodotta è utilizzata sia come foraggio che per il consumo umano. In quest’ultimo caso il consumo avviene principalmente sotto forma di farina o di granella intera.
Dal sorgo si ricavano numerosi alimenti: pane, pasta, polenta, pappe, bevande alcoliche, ecc..
La colorazione della granella può variare molto: può apparire da bianca fino a quasi bruno/violacea o nera.
Il colore più scuro è dovuto alla presenza di pigmenti nelle cellule del pericarpo e della spermoderma, associato alla presenza di tannini.
