Vintage 1970’s French LONG Rattan Banneton Proofing Bread Basket, BROTFORM. Measures 17” Long x 3.5”. Wide. From the 1970’s but NEVER USED! EXTRA LONG BASKET!


This is an oval rattan banneton (proofing basket), also known as a brotform. This kitchen tool is specifically designed for baking, not general storage.


Purpose and Function

• Proofing Dough: The primary use is for the final rise (proofing) of bread dough, especially for artisan and sourdough loaves.

• Wicking Moisture: The natural rattan material wicks moisture away from the surface of the dough, which helps create a crispy, golden crust during baking. • Shaping Dough: The basket supports the dough during its rise, helping it maintain a consistent oval shape for batards and baguettes.

• Creating Patterns: The coiled interior leaves a classic, rustic spiral pattern on the dough that bakes into the finished loaf.


How to Use:


1. Dust Liberally: The basket should be dusted generously with flour (rice flour works well) to prevent the sticky dough from adhering to the sides.


2. Place Dough: The shaped dough is placed seam-side up in the basket for its final fermentation period.


3. Transfer: Once the dough has risen, it is carefully flipped out of the banneton onto a baking surface (like parchment paper or a preheated Dutch oven). The bread is not baked in the basket itself.


Condition: Excellent; never used!
