Steel
We use Japanese steel renowned for its sharpness. The high-purity steel with impurities removed provides a sharp edge and easy sharpening. The blade expertly tempered and then reheated is extremely tough and known for its sharpness when honed thinly.
Purpose
The sujihiki knife is mainly used as a meat knife with its narrow blade ideal for slicing large blocks of meat along the grain. Many also use it as a slicer thus becoming popular among chefs as a sashimi knife.
Note
After use wash off any dirt and thoroughly dry with a clean cloth. Leaving moisture on the surface could cause rust. Do not use for frozen items as it may cause blade chipping.
Each piece is handmade so slight differences in weight and length are to be expected. Water buffalo is a natural material so colors may vary from the photo.
