Tadafusa Universal Petty Knife 125mm Made in Japan perfect for fruit carving and vegetable garnishing.

Kitchen Knife Workshop Tadafusa Universal Petty Knife 125mm

This is a kitchen knife that is typically referred to as a "petty" knife. While "petty" means small many people find this size to be just right unless they need something bigger. It is a kitchen knife that is used daily for cutting small items like breakfast. Fine work is entrusted to it.

Potato and carrot peeling vegetable carving and other intricate work that may be troublesome with larger knives can be easily done with this petty knife. A maneuverable and easy-to-handle knife is very convenient to have.

Craftsmanship of a well-established brand is hidden within. The handle is made of hard and rot-resistant chestnut wood which undergoes a special patented process by Tadafusa to become antibacterial charcoal wood. The antibacterial charcoal wood retains the texture of the wood itself while preventing the growth of bacteria by bringing it to a state just before becoming charcoal causing the bacteria to perish. The blade is made of a special alloy containing chrome carbon molybdenum vanadium and other elements similar to stainless steel giving it a hard and resilient edge that maintains a sharp cutting edge.

Basic set of 3 knives

With a wide variety of knives available it can be difficult to determine which one to choose. Therefore a set of three knives including a bread knife a versatile 170mm Santoku knife and a 125mm petty knife were developed as the "basic set." While these knives are mainly used by women in households designed by female product designer Fumie Shibata they are appealing to women's preferences. The design is meticulous down to the details yet not too assertive since they are used daily. The logo mark features a fire chopstick used by craftsmen designed by graphic designer Masaaki Hiromura.

Maintenance
- Tadafusa kitchen knives compared to all-stainless knives require a bit more care for maintaining their sharpness. Since they use SLD steel they may rust depending on the care and storage conditions. Even an overnight neglect in care and storage can lead to rust. Enjoy the pleasant cutting experience along with proper care and sharpening.
- After use wash the knife thoroughly with hot water to remove dirt then wipe off excess moisture and store it in a safe place.
- Especially after cutting salty or acidic foods like pickles or lemons be sure to wash off the dirt thoroughly.
- Do not put the knife in a dishwasher dryer microwave or oven as it may cause damage.
- Initially the sharpness may deteriorate with each use. It is recommended to sharpen the knife with a whetstone at least once every 3 months. If you find sharpening difficult you can leave it to the workshop.

Maintenance service
To maintain the sharpness it is essential to regularly sharpen the knife. While you can sharpen it yourself Tadafusa also offers a paid sharpening service at their workshop. A "knife diagnosis form" is included in the knife box which allows you to check the sharpening fee yourself. The box is designed to send the knife for sharpening so it is recommended to store the box instead of discarding it. Details on how to request sharpening and contact information are specified in the "knife diagnosis form." For any inquiries please contact Tadafusa directly.
