Dried scallops
lend a distinctive sweet sea salt flavor to any dish. It can used
immediately to give additional depth to the same dish. Dried scallops can
be added to soups, congee, stir fried dishes or casseroles. Dried scallops need to be first softened by soaking.
To
soak, you simply need to just cover the scallops with water and leave
until softened. The length of time will vary depending on size and
initial dryness, but anywhere from about 30 minutes to an hour will usually suffice. Once softened, the flesh can then be shredded into
thin fibers to be put in to soups, congee, stews, steamed egg, and
various other dishes. Make sure to retain the soaking water as it will be highly flavorful and can be added to whatever you are cooking.
Storage: Must be refrigerated once received (can be kept in the cooler or freezer).
