“First created sometime in the 1920s in either Australia or New Zealand (its exact origins remain disputed between the two nations to this day), pavlova is one of those desserts that seems like elegance made manifest. Named in honor of the Russian ballerina Anna Pavlova—a figure of considerable elegance herself—pavlova starts with a base of crisp-on-the-outside, dreamily-soft-and-light-on-the-inside meringue, which is then typically topped with a combination of fresh fruit and whipped cream, giving the eating experience a uniquely pleasing contrast of textures. Of course, as one might expect with any elegant dessert, it can be a challenging, time-consuming proposition to make at home—but we still think everyone ought to get a chance to try it. Right out of the package, they’re ready to be filled with fresh fruit and whipped cream for a minature pavola, or anything else you can imagine that might taste great inside some Meringue. (We’re rather excited about the possibilities of a Meringue Shell filled with Lemon Curd or some Cookie Butter whipped into some cream cheese, ourselves.)
