Elderflowers are the small, creamy-white, fragrant flowers of the elder tree (Sambucus) that bloom in late spring/early summer and are known for their sweet, floral taste, commonly used to make elderflower cordial, champagne, wine and other culinary delights.  

Fresh elderflowers do not stay fresh for very long at all but in their dried form 

they are a lot more stable.
