The sprouts are sweet & crunchy, & are popular in salads & stir fries. The Mung Bean has been part of Ayurvedic diets for millenniums. It is a native of South America, but is quite popular in Chinese / Asian, & Indian cuisine. The beans can be uséd dried, & made into mung bean paste.
