A premium rice vinegar brewed using traditional static fermentation and JAS-certified organic Akita Komachi rice.

Crafted with natural underground water from northern Hiroshima and made only from rice—no additives, no shortcuts.

This vinegar is made following time-honored methods: brewing junmai sake, followed by a slow, natural fermentation process in a still fermentation room, with long-term aging.

Its rich aroma and mellow acidity make it the “daiginjo” of vinegars, offering a flavor that reflects the deep care and attention given to its creation.
