The crude #240 grit is suitable used to grind and renew the tips quickly of Cooking knives, scissors, and industrial tools like saw blades.
After that Chef usually use #1000 Grit to smooth the edge again.

1. Before use stone please soaking water for 5 minutes, make smooth sharpen ability.

2. Wash and completely dry your knife. Place your blade Draw the edge backward and
   forward at an angle of about (15~20) degrees as the illustration.
   It is best to sharpen starting wih the tip of the edge. This action need to practice many times to prevent scratch on the blade.

3. Do not leave the finish stones in water. They should be stored dry. Do not fall or break the stones.

4. When first time to used Water Stones before, you may do research on web how to use and maintain them.
   

5. After sharpening, knives should be washed in hot water and dried throughly.
