The heavy-duty V-blade isn't your only option, you can swap in two sizes of julienne blades, too. And best of all, with the gripper handle system (which slides on a track, keeping your cuts steady), you can julienne a potato in one slice, turn the whole thing 90 degrees, and then cut again to get a neat, perfectly-cubed dice.
