Ingredients:
Salt, Sugar, Spices,
Dehydrated & Ground Jalapeno Peppers, Hydrolyzed Soy Protein, Onion
& Garlic Powders, Spice Extractives & Sodium Erythorbate.
Jerky
Directions: For 20 lbs:
Combine meat strips, seasoning, cure packet
& 2 1/2 quarts cold water; mix well. Refrigerate overnight to cure.
Next day, remove from liquid, do not rinse, spread out on drying
racks and dry in usual manner in smoker, oven or dehydrator.
For
Ground Jerky:
Combine 20 lbs ground meat, seasoning, cure salt and 1/2 -1 cup cold water; knead well roll out 1/8 - 3/16" thick patties between 2 sheets plastic wrap, or shoot out strips using a jerky gun. Refrigerate overnight to cure; next day, dry in usual manner.
