Cold Hibiscus Drink:

Cold hibiscus juice is a refreshing summer drink, sometimes called "Annab" by a popular local name. It's also a staple Ramadan beverage.

Ingredients:

1 cup dried hibiscus leaves

4 cups lukewarm water

1 cup sugar (or to taste)

2 drops concentrated berry flavoring (optional)

2 cups ice cubes

Preparation:

In a large pot, add the lukewarm water and hibiscus leaves.

Place the pot over medium heat and bring the water and hibiscus leaves to a boil.

Remove the pot from the heat and let it steep for at least four hours until cool. Strain the hibiscus tea using a sieve, discarding the hibiscus leaves.

Add the raspberry flavoring and sugar, and stir well.

Pour the hibiscus tea into serving glasses, add ice cubes, and serve chilled. Alternatively, you can refrigerate the hibiscus tea after straining it completely, sweeten it, and serve it without ice cubes.

The secret to a perfect chilled hibiscus tea:

• It's best to boil the hibiscus leaves in water to fully extract the benefits of the hibiscus.

• Let the hibiscus tea steep for an extended period after boiling to allow the water to absorb the hibiscus flavor and distinctive color.

• You can also serve the hibiscus tea hot (according to your preference).
