As the name suggests, Pasco's "Long Life Bread" series is bread with a long expiration date.

Since it uses a yeast called "Panettone" that contains lactic acid bacteria that enhance preservatives, it can maintain its deliciousness for a long time without using preservatives.

● What is the secret to the long expiration date of long-life bread?

A long-life bread that can be eaten deliciously for a long time even though it does not use preservatives. The three secrets work to achieve long-lasting deliciousness.

① Panettone species

We use a fermented species called Panettone, which has been used for a long time in certain regions of northern Italy. Panettone species that have been aged for a long time contain a large amount of lactic acid bacteria, have strong acidity, and have high water retention and bacteriostatic properties, so the growth of the bacteria is suppressed.

② Low water activity

By slowly fermenting it over time, the water will combine with proteins and starch to reduce water activity. Bread with a high proportion of "bound water", which has low water activity, makes it difficult for microorganisms to grow, so it is moist and soft, but it lasts for a long time.

③ Danish pastry

Many long-life breads are made from Danish pastry. Danish pastry is made by layering thinly stretched bread dough and oils and fats, so the appropriate amount of oil eliminates the dryness of the bread and keeps it moist for a long time.
