Black Turtle Beans for Cooking

These dried black turtle beans become creamy inside when properly cooked, with an earthy flavour that works well in chilli, tacos, soups and bean dips. They are supplied for cooking, rather than edible sprouting.

Preparation

Sort and rinse the beans, then soak for 8–12 hours. Throw away the soaking water and add fresh water. Boil vigorously for at least 30 minutes, then simmer until completely soft, allowing roughly 60–90 minutes total cooking time or longer as needed. Never eat them raw or partly cooked, and do not rely on a low-temperature slow cooker alone.

Storage and ordering

Keep unused seed or grain tightly sealed in a cool, dry, dark place, protected from moisture and heat.
