OzSprout
Ruby adzuki beans bring a pleasantly sweet, nutty flavour and a substantial crunch to home-grown sprouts. These Australian-grown red beans also make a useful pantry ingredient: cook them until soft for soups, curries or homemade red bean paste.
Soak for 8–12 hours, then rinse and drain well 2–3 times a day. Leave space for the beans to expand and keep the sprouter out of strong sunlight. Short, crisp sprouts usually develop in 3–6 days. Remove any hard, unsprouted beans before use.
Use clean equipment and drinking-quality water. Drain harvested sprouts well and refrigerate promptly. Discard any batch with slime, mould or an unusual smell. Raw sprouts can carry harmful bacteria; thorough cooking lowers that risk.
Keep unused seed or grain tightly sealed in a cool, dry, dark place, protected from moisture and heat.
